Idaho potatoes, peeled and sliced into 1/4 inch thick medallions and then a cookie cutter makes my shapes; I used mini shapes of circles and straws. Fry your potatoes in hot oil, 375 degrees, and lay out on a plated with paper towels to help blot the excess grease. Season as they come out; I use a mixture of salt, black pepper, granulated garlic and parsley flakes for some color...delicious!
